Fit with Fave - Common Sense Changes for Better Eating - Girl of Cardigan

Oh hi folks.

This week’s challenge is a pretty simple one, but here’s a little backstory.  We’re operating on the assumption that most Americans (based on Fave’s research and my personal experience) are eating a certain way.  For a lot of us, that means that a “meal” is defined in three parts: meat, a veggie, and most likely a starch of some kind, maybe Rice-a-Roni or something similar.  One of our goals is to cut back on our meat consumption (not eliminate it, just cut back on it so we can indulge in our occasional hamburger while still enjoying the benefits of a mostly plant based diet).

So this week, your challenge is to cut the meat out of two of your dinners.  If you have been doing the Go-Ahead challenges, this means you’re looking at 4 nights a week with no meat.  If you haven’t, well, I’m asking you for 2 out of 7.  Two vegetarian dinners this week.  You can do it.  You know how I know?  Because I have an awesome list of tried and tested recipes here for you to enjoy!

Note: A lot of these recipes are also vegan.  Don’t let the word vegan freak you out.  It just means there isn’t any cheese or milk or egg in them.  Lots of stuff you eat is vegan.  Like Oreos.  It’s totally going to be okay.

Easy Green Curry from Vegan Dad – mild veggie curry, relatively quick to put together, tasty stuff

Farro with Roasted Butternut Squash, Kale, and Cranberries from Milk Free Mom – Farro is a fun new grain to try (it’s pronounced far-o, but you better believe I danced around singing Pharaoh Pharaoh the whole time I was making this)

Superfood Salad from Iowa Girl Eats – lose the shrimp, and this is perfect hot weather food.  We ate some tonight!

Roasted Pumpkin and Smoked Blue Cheese Lasagna from Naturally Ella – for you foodies who don’t mind doing some serious cooking.

Quinoa and Sweet Potato Chili from Milk Free Mom – This is a staple food in our house.  We eat it all the time all the time all the time.

Spicy Pasta Salad with Smoked Gouda, Basil, and Tomatoes from The Pioneer Woman – My favorite splurge.  Yum.

Roasted Eggplant Salad with Smoked Almonds and Goat Cheese from The Kitchn- To. Die. For.  If you don’t have smoked paprika in your arsenal, you should get some.

Spot-on Cheesecake Factory Avocado Egg Rolls from Life Ann Style – You might have to hunt down a few ingredients, but if you’ve had these egg rolls before, you know I know you know it’s worth it.

    Arrrgh! You always get me with the veggies! All your other rules are so easily applied. 😉 That said, I do have some favorite veggie meals, thanks to pinterst…
